the tastings

degustazioni e mostra

To savor the true taste of Chianti Classico, with its authentic colors and flavors, tastings and exhibitions are a must.

Entering the ancient part of the cellar is like embarking on a true journey through the scents of winemaking and olive oil traditions: the old barrel room, once also a wartime shelter, and the amphora room, with its old terracotta containers, retrace the stages of the evolution of oil and wine, spreading their aromas throughout the air.

The wine tasting takes place partly directly from the barrels and partly in the new room specifically set up for this purpose, with a terrace offering a view of the Chianti hills and a historic combine harvester on display. The tasting includes: “Chianti Classico DOCG I’Versoio,” “Chianti Classico Riserva DOCG I’Giogo,” the barrel-aged IGT Toscana “Stibbio,” the white wine “Trebbia,” as well as the Vin Santo DOC “Dante” with cantuccini and Chianti Classico “Bruscola” grappa. The tasting journey is crowned by the “Bruscola” Extra Virgin Olive Oil, tasted both pure and paired with excellent bruschetta.

All products are available for purchase at the farm, and orders and direct shipments to private customers and commercial establishments are also available both nationally and internationally.

By reservation, it is possible to organize tastings with specific pairings during lunch or dinner for groups of at least 10 people.

To complete the journey into rural tradition, there is a permanent exhibition of typical 20th-century tools used in the wheat, oil and wine industries. These sectors represent the activities of the Mori family over the years and the objects collected document their history.

The route traces the four seasons through the equipment used in the fields, in the cellar and at the oil mill in order to guide visitors through the typical tasks of farmers from sharecropping times to the present day. Among them are ‘il versoio’, ‘il giogo’, ‘la trebbia’ from which the names of some wines are inspired, as well as ‘la bruscola’ from which the winery itself takes its name.
