The name of the Chianti Classico Riserva I'Giogo draws an analogy with the tool, displayed in the permanent exhibition, that enhanced the strength of the two oxen in fieldwork: in the same way, the selection of the best grapes and the aging of the wine enhance the organoleptic characteristics of the product. The winemaking process follows the classic method. The Sangiovese grapes are hand-harvested, and malolactic fermentation takes place in large oak barrels, where the wine matures for at least 24 months. I'Giogo has an intense red color with garnet reflections; on the nose, it reveals fruity hints of plum and subtle notes of tobacco. The taste is dry and fresh, with a soft tannic structure and a lingering aftertaste. It pairs excellently with game, braised meats, or aged cheeses, which highlight its intense and captivating flavor.
